Can someone explain please? Because if Mandarin is all concentrated in one country, why are a fourth of its speakers second-language speakers? thanks in advance!!

And is Min a dialect of Mandarin? I’m writing a book and need a language spoken in China that ‘most’ Chinese wouldn’t understand. My research led me to Min, but is there a better option?
