why cant you speak mandarin to another Chinese person at work? Why is it offensive to people?

I live in America, my purpose in learning is primarily for medical assessment in patient care. So in America, I’m in the southwest most of the year, NYC at times, which am I better learning? They are pretty much completely different right?

I’m hoping to find a site where I could read, write and speak Mandarin.

In English, we have many phrases/slang that are used in everyday speech. Things like, "you bet" or "gnarly" or "dude," etc. What phrase or term do you find yourself using the most when you speak Mandarin?

If I were to learn one, would I be able to pick up on the other easily? From what I understand, people who speak Mandarin can’t understand those who speak Cantonese and vice versa, but I wonder if knowing one will give me an advantage on learning the other.

I would like to support my Chinese Mandarin studies with some online resources. I am looking for a multimedia approach with pictures/videos, audio and also some printable documents for making exercises (like flashcards). It would be great if some of you could recommend some links!
