Which was more widely spoke in th e American Chinatowns of the twenties: Mandarin or Cantonese?

I’m working on a historical fiction novel set in the twenties and would like to use as much "genuine" language as possible. There are two Chinese Americans in the story and the Chinatown is modeled mostly off of the one in San Francisco. (As, so far, that has been the most fruitful period reference.)

As such, I thought it would be interesting to write in their language when they are talking amoungst themselves.
